Pineapple Green Chile Quesadillas
2 flour tortillas
1/3 cup (or more) of monterrey jack cheese shredded
2 tbsp. pineapple tidbits well-drained, chopped
1 tbsp. canned green chiles diced
1 tbsp. fresh cilantro chopped
light olive oil
Place one tortilla in an oiled skillet. Place cheese, pineapple, green chiles and cilantro on top of tortilla. Top with another tortilla. Press down on tortilla to flatten somewhat. Turn when bottom tortilla is lightly browned- add more oil if necessary. Remove from pan when cheese begins to melt. Cool before eating. Cut quesadillas into triangles and serve with ranch dressing. Can also be made in a quesadillas maker. Serves 1-2.
