Sweet Cinnamon Nuts
1/2 cup cane sugar
1/4 cup water
1/2 tsp. ground cinnamon
2 cups walnut or pecan halves
1. Combine ingredients, except nuts, in a non-stick skillet over medium-high heat. Bring mixture to 240 F degrees (firm-ball stage) temperature.
2. Fold in nuts until coated with sugar mixture. Bring mixture to boiling, stirring constantly. Sugar mixture will start to form strands and thicken when stirred and sugar will crystallize around nuts. When this occurs remove skillet from heat and continue to stir nut mixture and loosen nuts with a spoon from skillet.
3. Spread nuts on a cookie sheet. When cool, place in a covered container.
