Ingredients

  • 2 cups sifted whole wheat pastry flour

  • 1/4 cup cane sugar

  • 1 tbsp. baking powder

  • 1 tsp. lemon zest minced

  • 1/4 tsp. salt

  • 1/4 tsp. ground cinnamon

  • 1 egg slightly beaten

  • 1 cup milk

  • 1/4 butter melted, cooled

  • 3/4 cup pineapple drained finely chopped

  • 1/4 cup flaked coconut

  • 1/4 cup walnuts chopped

  • brown sugar

Directions

  • Preheat oven to 400ºF. In a bowl, combine dry ingredients. In another bowl, combine remaining ingredients. Stir into dry mixture. Stir until mixed- do not over stir.
  • Pour in buttered cups in a muffin pan. Sprinkle each muffin with brown sugar.
  • Bake for 20-25 minutes or until done. Cool on a wire rack for a few minutes then remove muffins from pan. Makes 12 muffins.
