Irish Soda Bread
2 cups whole wheat flour
1 cup white flour
1/2 cup brown sugar
1/2 tsp. cinnamon
1/2 tsp. salt
1 1/2 tsp. baking soda
2 cups buttermilk (or 2 cups milk + 2 tbsp. lemon juice)
1. Combine first five ingredients in a bowl.
2. Combine baking soda and buttermilk in a cup. Make a crater in center of flour mixture. 3. Combine buttermilk and baking soda mixture. Pour in the crater and mix into a dough.
3. Pour into two greased 9x5 bread pans. Bake at 350 F degrees for 40-45 minutes. Ten minutes before removing from oven, brush bread with melted butter.
