Ingredients

  • 3 eggs

  • 1 1/4 cups sugar

  • 2/3 cup light olive oil

  • 2 cups zucchini grated and patted dry

  • 2 tsp. vanilla or 1 tsp. vanilla and 1 tsp. orange extract

  • 3 cups flour

  • 2 tsp. cinnamon

  • 1 tsp. baking soda

  • 1 tsp. salt

  • 1/4 tsp. baking powder

  • 1 cup walnuts or pecans

  • 3/4 cup mini semi-sweet chocolate chips

Directions

  • With an electric mixer, combine first five ingredients in bowl. Gradually add mixed dry ingredients to first five ingredients.
  • Pour dough into two 9 by 5 greased/ floured bread pans. Tap pans on table to remove excess air bubbles.
  • Bake in a preheated oven at 350ºF for 45-50 minutes or until long thin stick inserted in bread comes out clean- not sticky with dough.
