Southwest chili is a Southwestern style chili that typically combines ground beef with pinto beans, onions, tomato based sauce, chili powder, cumin, and other spices. Often it can be served with toppings such as shredded cheese, sour cream, and sliced avocado. It is typically spicy and hearty.

Ingredients

  • 1/2 lb. ground beef

  • 1/2 medium onion finely chopped

  • 3 tbsp. taco seasoning

  • 1 tbsp. dried minced onion

  • 2 tbsp. ground chili powder

  • 2 tsp. sugar

  • 1 tsp. ground cumin

  • 1 tsp. garlic powder

  • 1/2 tsp. crushed red pepper

  • 1/2 tsp. salt

  • 2-15 oz. cans pinto beans

  • 10 3/4 oz. can condensed tomato soup with added 1/2 can water

  • 1 cup spaghetti pasta cooked, drained or ramen soup noodles

  • shredded cheddar cheese

  • avocado chopped

  • sliced pickled jalapeno peppers

  • sour cream

Directions

  • Sauté beef and onion in a large skillet until browned and drain excess fat. In a mid-size slow-cooker combine spices and canned ingredients.
  • Cook for 4 hours on high- stirring occasionally. Add more water if necessary. Add cooked spaghetti or uncooked ramen noodles, which cook quicker, at least 30 minutes before cooking is complete.
  • Place chili in soup bowls and garnish with cheddar cheese, avocado, jalapenos and sour cream if desired.
