
Avocado and Cilantro Huevos
Ingredients
1 tbsp. butter
1/2 tbsp. olive or coconut oil
3 eggs beaten
1/2 medium avocado chopped
sprinkle chopped fresh cilantro
sprinkle chopped jalapeno pepper
sprinkle garlic salt
dash black pepper
havarti or monterrey jack cheese sliced or shredded
hot sauce
Directions
In a medium hot non-stick skillet, place olive oil and butter. Beat eggs in a bowl. When butter is melted, pour egg mixture into skillet. Turn down heat on stove to medium-low. Let eggs set a bit then scramble them with a folding motion- not too much. Add seasonings. Add avocado and cilantro. Add cheese to top of egg mixture. Cover with skillet top to melt cheese. Cook until eggs are completely solid in texture. Top with hot sauce. Serve eggs warm. Makes 3-4 servings.
