Ingredients

  • 2 tbsp. olive oil

  • 1/2 medium onion finely diced

  • 2 cloves garlic minced

  • 6 eggs beaten

  • 1 cup frozen or fresh, cooked, drained spinach chopped

  • 1 cup sharp cheddar cheese shredded

  • 1/2 tsp. dried parsley

  • 1/2 tsp. garlic salt

  • 1/4 tsp. dried basil

  • 1/4 tsp. dried oregano

  • 1/8 tsp. black pepper

  • pinch cayenne pepper (optional)

Directions

  • In non-stick skillet over medium heat, sauté onion in olive oil until tender. Add garlic and cook for a few more minutes.
  • Combine remaining ingredients in a bowl. Add this mixture to onion and garlic mixture.
  • Cook over medium-low heat until egg mixture is completely cooked- do not stir mixture, but occasionally go around skillet with a spatula to loosen sides.
  • Next, place skillet (make sure skillet is high-heat resistant) under a broiler in an oven until egg mixture top is golden brown. To serve, cut into pie shaped slices.
