Ingredients

  • 2 cups onions thinly sliced

  • 4 tbsp. butter

  • 1 tbsp. flour

  • 4 cups beef broth

  • 1/2 tsp. dried parsley

  • dash salt and pepper

  • grated parmesan cheese

Directions

  • In saucepan over low heat, cook onions in butter, stirring
    frequently until tender. Sprinkle flour over onions and
    stir. Add broth and salt and pepper.
  • Bring mixture to a boil,
    stirring constantly. Reduce heat and simmer for 20-25 minutes.
  • Pour soup in bowls. Place toasted french bread slices on top of soup. Top with parmesan cheese.
