Mexican Rice

Mexican rice, also called as “Arroz Rojo” or “Arroz Mexicano” in Spanish, is a popular dish from Mexican cuisine. It is a flavorful dish made with rice, tomato sauce or fresh tomatoes, onions, garlic, and spices such as cumin and chili powder. Mexican rice can accompany many dishes, such as tacos, enchiladas, burritos, or grilled meats, and is a staple for many.

Ingredients

  • 1 cup rice

  • 1 1/2 tbsp. oil

  • 1/4 cup onion chopped

  • 2 cloves garlic minced

  • 8 oz. can tomato sauce

  • water

  • 1 tsp. chicken bouillon paste or granules

  • salt and pepper

Directions

  • In a mid size saucepan, sauté rice in oil. Fry until lightly brown stirring often. Add onion and garlic.
  • Cook 1 minute. Remove from heat and let sit for 1 minute.
  • Combine water and tomato sauce to make 2 cups. Add this to chicken bouillon and salt and pepper. Stir until bouillon is dissolved.
  • Bring to a boil, then turn down heat and cover saucepan with a lid and cook 20 minutes or until rice is tender.
