Chicken Fried Tuna Cakes
2-7 oz. cans tuna well-drained
2 tbsp. cream cheese softened
2 tbsp. italian breadcrumbs
6 small sun-dried tomato halves in jar with liquid chopped
1 tsp. powdered mustard dash red pepper sauce
1 egg beaten cornmeal or flour
Combine ingredients in a bowl. Form mixture into 6-8 thin cakes depending on size. Dip in flour until coated on both sides. Fry in oil until golden brown on each side for 3-5 minutes or until done. Serve with salsa or hot sauce.
