
Incredible Potato Chicken Vegetable Soup
Incredibly Simple to Make
Ingredients
1 large potato
1 stalk celery sliced
1/2 red bell pepper chopped
1/2 onion chopped
1 clove garlic minced
1 tbsp. olive oil
water
10.5 oz. can cream of chicken soup plus 1 can milk
1 cup shredded cheddar cheese
Directions
Cook potato in microwave for 4-6 minutes depending on microwave power. Peel potato when cool. In a nonstick midsize saucepot over medium-high heat cook celery, bell pepper and onion in oil. When veggies start to brown, add enough water to cover veggies. Cook veggies until tender. Add cream of chicken soup and milk, potatoes and cheddar cheese. Stir until combined. Simmer for 10-15 minutes.
