Ingredients

  • 4 cups chicken broth

  • 15 oz. can pinto beans

  • 15 oz. can mexican style stewed tomatoes chopped

  • 4 oz. can green chilies chopped

  • 2 cups cooked chicken or turkey chopped

  • 1/3 cup frozen corn kernels

  • 1/4 cup red bell pepper chopped

  • 2 cloves garlic minced

  • 1 tbsp. minced dried onion

  • 1 tsp. chili powder

  • 1/2 tsp. salt

  • 1/4 tsp. crushed red pepper flakes

  • 1/4 tsp. ground cumin

  • 1/4 tsp. oregano

Directions

  • Combine ingredients in a large sauce pan. Cover pan with lid and cook over medium-low heat, simmering until fully cooked, about 20-30 minutes.
  • Pour soup into bowls and top with shredded cheese, chopped cilantro and crushed tortilla chips.
  • Serve with warm flour tortillas, butter or margarine and honey.
