Vinaigrette Beet and Egg Salad- a delicious salad
Ingredients
1 medium head romaine lettuce (washed and drained)
1/4 head iceberg lettuce (washed and drained)
16 oz. can sliced beets chilled, drained
2-3 hard-cooked eggs coarsely chopped
1/3 cup chopped walnuts or pecans
- Vinaigrette Dressing
1/4 cup vinegar
1/3 cup extra virgin olive oil
1 tbsp. prepared horseradish drained
1/2 tsp. celery salt
dash freshly ground pepper
Directions
- Tear lettuce into bite-size pieces. Toss ingredients together in a large bowl.
- Whisk dressing ingredients in an another small bowl.
- Pour dressing over beet salad and toss again. Yield: 7-8 servings.
