1 cup raisins
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground cloves
1/8 tsp. ground nutmeg
1 cup butter or margarine
1/2 cup brown sugar
1/2 cup white sugar
2 large eggs
1 tsp. vanilla
2 cups rolled oats
1 cup walnuts chopped
Directions
- Soak raisins in 1 cup hot water for ten minutes. Drain raisins and reserve 1/3 cup raisin liquid. Mix flour, baking soda, salt cinnamon, cloves and nutmeg in a bowl.
- Cream sugar and butter in another bowl. Mix in 1/3 cup raisin liquid. Blend in eggs and vanilla.
- Slowly add dry ingredients to creamed mixture. Stir in oatmeal. Stir in walnuts. Stir in raisins.
- Drop by heaping tablespoon (or a small scoop) onto a cooking oil sprayed cookie sheet. Bake in a preheated 350ºF oven for 10-15 minutes or until golden brown.
