3 tbsp. cornstarch
1/3 cup cocoa powder
1/8 tsp. salt
2 cups milk
2 egg yolks slightly beaten
1 tsp. vanilla
whipped cream
mini semi-sweet chocolate chips
Directions
- Blend sugar, cornstarch, cocoa and salt in 2 quart saucepan. Combine milk and egg yolks. Gradually whisk into sugar mixture.
- Cook over medium heat, whisking constantly until mixture thickens and boils. Boil and whisk 1 minute.
- Remove from heat and stir in vanilla. Cool. Refrigerate pudding for a few hours before serving.
- Pour into dessert cups and top with whipped cream and mini semi-sweet chocolate chips or shavings.
