Ingredients
4 oz. sliced mushrooms
1/2 tbsp. light olive oil
15 oz. can navy or northern beans
10 3/4 oz. can condensed cream of mushroom soup
1 soup can milk (plus enough to thin soup to ideal consistency)
2 finely chopped garlic cloves
salt and pepper to taste
bunch fresh chopped chives or parsley
Directions
- Sauté mushrooms in oil in a 3 quart saucepan over medium-low heat until tender.
- Add remaining ingredients to saucepan.
- Simmer ingredients, stirring occasionally. Cook for 15-20 minutes or until heated through. Add a little more milk if soup becomes too thick and cook longer.
