A Quick and Delicious Soup

Ingredients

  • 4 oz. sliced mushrooms

  • 1/2 tbsp. light olive oil

  • 15 oz. can navy or northern beans

  • 10 3/4 oz. can condensed cream of mushroom soup

  • 1 soup can milk (plus enough to thin soup to ideal consistency)

  • 2 finely chopped garlic cloves

  • salt and pepper to taste

  • bunch fresh chopped chives or parsley

Directions

  • Sauté mushrooms in oil in a 3 quart saucepan over medium-low heat until tender.
  • Add remaining ingredients to saucepan.
  • Simmer ingredients, stirring occasionally. Cook for 15-20 minutes or until heated through. Add a little more milk if soup becomes too thick and cook longer.
