Flounder is a flatfish species. It is known for its low mercury content. This delectable fish has a mild flavor and a flaky, delicate texture. Pungent Breaded Flounder is marinated in tarragon vinegar for a short time to enhance its flavor. The recipe goes even further in taste by frying the flounder in butter with a cornbread/flour coating.

Pungent Breaded Flounder is Tender and Tangy

Ingredients

  • 1 lb. flounder fillets or 16 oz. package frozen flounder fillets thawed

  • 1/2 cup tarragon vinegar

  • 1/4 cup yellow cornmeal

  • 1/4 cup flour

  • 1/2 tsp. salt

  • dash black pepper

  • 3 tbsp. butter

Directions

  • In a shallow dish, marinate flounder in vinegar for 15 minutes. Drain fish well on paper towels.
  • In a shallow pan or dish, mix cornmeal, flour and salt and pepper. Use to coat flounder.
  • In a large skillet, over medium heat, in hot butter, fry flounder 2-3 minutes on each side until fish flakes easily when tested with fork. Makes 4 servings.
