Crispy Lemon Chicken
cooked breaded chicken tenders sliced (1 inch thick) or nuggets
lemon sauce (below)
red pepper flakes
Cook chicken tenders according to package directions. Place cooked, warm rice on each plate. Top with cooked chicken. Pour warm lemon sauce over chicken and rice. Sprinkle with red pepper flakes and sesame seeds.
1 cup water
1/2 cup cane sugar
2 tbsp. cornstarch
2 tbsp. butter or buttery spread
1/3 cup lemon juice
1 tsp. lemon zest chopped
Combine water, sugar and cornstarch. Bring mixture to a boil. Lower heat and stir for five minutes until sauce is thickened. Remove mixture from heat. Add butter, lemon juice and lemon zest. Makes almost 2 cups.
