4 cups chicken broth
15 oz. can pinto beans
15 oz. can mexican style stewed tomatoes chopped
4 oz. can green chilies chopped
2 cups cooked chicken or turkey chopped
1/3 cup frozen corn kernels
1/4 cup red bell pepper chopped
2 cloves garlic minced
1 tbsp. minced dried onion
1 tsp. chili powder
1/2 tsp. salt
1/4 tsp. crushed red pepper flakes
1/4 tsp. ground cumin
1/4 tsp. oregano
Directions
- Combine ingredients in a large sauce pan. Cover pan with lid and cook over medium-low heat, simmering until fully cooked, about 20-30 minutes.
- Pour soup into bowls and top with shredded cheese, chopped cilantro and crushed tortilla chips.
- Serve with warm flour tortillas, butter or margarine and honey.
