1/2 cup butter or margarine softened
1 cup cane sugar
2 eggs
3 ripe medium-size bananas mashed
2 cups all-purpose flour
1/2 tbsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1 cup nuts chopped or 2/3 cup mini chocolate chips
Directions
- With an electric mixer, cream butter and sugar in a mid-size bowl. Mix in eggs, then bananas.
- Combine flour, baking powder, baking soda and salt in a mid-size bowl. Slowly add dry mixture to wet mixture until combined.
- Pour into a greased/floured 9 by 5 inch bread pan.
- Bake in a preheated oven at 350ºF for 45-50 minutes or until long thin stick inserted in bread comes out clean- not sticky with dough. When cool, remove bread from pan
to cooling rack. Use a table knife to gently loosen bread inside pan.
