2 flour tortillas (taco or fajita size)
1/3 cup (or more) of monterrey jack cheese shredded
2 tbsp. pineapple tidbits well-drained, chopped
1 tbsp. canned green chiles diced
1 tbsp. fresh cilantro chopped
light olive oil
Directions
- Place one tortilla on an oiled skillet heated over medium heat.
- Place cheese, pineapple, green chiles and cilantro on top of tortilla. Top with another tortilla. Press down on tortilla with a spatula to flatten somewhat. Turn when bottom tortilla is lightly browned.
- Remove from pan when cheese begins to melt and other tortilla side is lightly browned. Cool before eating. Cut quesadillas into triangles and serve with ranch dressing or hot sauce.
- Can also be made in a quesadilla maker. Serves 1-2.
