  • 15 oz. can black beans drained and rinsed

  • 1/2 red or green pepper diced

  • 1 roma tomato diced

  • 1 stalk celery diced

  • 1/2 small red onion diced

  • 1 cup frozen corn thawed

  • 1 small jalapeno diced or to taste

  • 1/4 cup olive oil or to taste

  • 1/4 cup rice vinegar or to taste

  • 2 tsp. fresh parsley or cilantro chopped

  • 1/2 tsp. garlic salt

  • 1/4 tsp. black pepper

  • dash ground cumin

  • 1 avocado sliced


  • Combine ingredients in a large bowl.
  • Garnish with sliced avocado. Chill leftovers.
