1/2 red or green pepper diced
1 roma tomato diced
1 stalk celery diced
1/2 small red onion diced
1 cup frozen corn thawed
1 small jalapeno diced or to taste
1/4 cup olive oil or to taste
1/4 cup rice vinegar or to taste
2 tsp. fresh parsley or cilantro chopped
1/2 tsp. garlic salt
1/4 tsp. black pepper
dash ground cumin
1 avocado sliced
Directions
- Combine ingredients in a large bowl.
