  • 2-7 oz. cans tuna well-drained

  • 2 tbsp. cream cheese softened

  • 2 tbsp. italian breadcrumbs

  • 6 small chopped sun-dried tomato halves in jar with liquid

  • 1 tsp. powdered mustard

  • dash red pepper sauce

  • 1 egg beaten

  • cornmeal or flour


  • Combine ingredients in a bowl.
  • Form mixture into 6-8 thin cakes depending on size. Dip in flour until coated on both sides.
  • Fry in oil until golden brown on each side for 3-5 minutes or until done.
  • Serve with salsa, hot sauce or ranch dressing.
