2 tbsp. olive oil
1/2 medium onion finely diced
2 cloves garlic minced
6 eggs beaten
1 cup frozen or fresh, cooked, drained spinach chopped
1 cup sharp cheddar cheese shredded
1/2 tsp. dried parsley
1/2 tsp. garlic salt
1/4 tsp. dried basil
1/4 tsp. dried oregano
1/8 tsp. black pepper
pinch cayenne pepper (optional)
Directions
- In non-stick skillet over medium heat, sauté onion in olive oil until tender. Add garlic and cook for a few more minutes.
- Combine remaining ingredients in a bowl. Add this mixture to onion and garlic mixture.
- Cook over medium-low heat until egg mixture is completely cooked- do not stir mixture, but occasionally go around skillet with a spatula to loosen sides.
- Next, place skillet (make sure skillet is high-heat resistant) under a broiler in an oven until egg mixture top is golden brown. To serve, cut into pie shaped slices.
