2 potatoes
1 tbsp. olive oil
1 tbsp. all-purpose flour
salt and pepper to taste
Directions
- Cook 2 potatoes for 5-6 minutes until fork tender in the microwave, depending on microwave watts. Take out and cool potatoes.
- Peel potatoes and cut in small chunks. Place potatoes in a mid-size bowl. Salt and pepper potato chunks and let sit for 10 minutes. Sprinkle on 1 tbsp. olive oil and 1 tbsp. flour and stir potatoes gently.
- Oil a heated flat grill or skillet and cook potatoes on medium heat, turning occasionally.
- Sprinkle on a little bit more salt and pepper and more olive oil if potatoes are too dry.
