Cinnamon Apple Preserves is a sweet and spicy spread made by cooking diced apples with sugar, cinnamon. The mixture is cooked until it thickens to a jam-like consistency, then canned or refrigerated for preservation. It can be used as a topping for toast and pastries, as a filling in pies and tarts, or as a condiment for meat dishes like pork or chicken.

2 apples peeled, cored and chopped
1 cup cane sugar
1/4 tsp. cinnamon
1 tsp. lemon juice
Directions
- Combine apples, sugar and cinnamon and lemon juice in a saucepan and bring to a boil.
- Reduce heat to medium-low and cook for 20-25 minutes or until apples are fully cooked and translucent, stirring occasionally. As apples cook, mash them with a potato masher.
- Pour into a jar and seal. Since preserves are not canned in a water bath process, refrigeration is necessary. Preserves will keep in a refrigerator for a few weeks.
- Makes about 1 1/2 cups preserves.
