2 cups sifted whole wheat pastry flour
1/4 cup cane sugar
1 tbsp. baking powder
1 tsp. lemon zest minced
1/4 tsp. salt
1/4 tsp. ground cinnamon
1 egg slightly beaten
1 cup milk
1/4 butter melted, cooled
3/4 cup pineapple drained finely chopped
1/4 cup flaked coconut
1/4 cup walnuts chopped
- Preheat oven to 400ºF. In a bowl, combine dry ingredients. In another bowl, combine remaining ingredients. Stir into dry mixture. Stir until mixed- do not over stir.
- Pour in buttered cups in a muffin pan. Sprinkle each muffin with brown sugar.
- Bake for 20-25 minutes or until done. Cool on a wire rack for a few minutes then remove muffins from pan. Makes 12 muffins.
