1 stalk celery sliced
1/2 red bell pepper chopped
1/2 onion chopped
1 tbsp. olive oil
water
1 large cooked, chopped potato
10.5 oz. can cream of chicken soup plus 1 can milk
2/3 cup chopped cooked chicken
1 clove garlic minced
1 cup shredded cheddar cheese
Directions
- Cook whole potato in microwave for 4-6 minutes depending on microwave power. Peel potato when cool.
- In a nonstick mid-size saucepot over medium heat cook celery, bell pepper and onion in oil. Before veggies start to brown, add enough water to cover veggies. Cook veggies until tender.
- Add cream of chicken soup and milk, chicken, potato, garlic and cheddar cheese. Stir until combined. Simmer for 10-15 minutes or until heated through.
