  • 1 stalk celery sliced

  • 1/2 red bell pepper chopped

  • 1/2 onion chopped

  • 1 tbsp. olive oil

  • water

  • 1 large cooked, chopped potato

  • 10.5 oz. can cream of chicken soup plus 1 can milk

  • 2/3 cup chopped cooked chicken

  • 1 clove garlic minced

  • 1 cup shredded cheddar cheese


  • Cook whole potato in microwave for 4-6 minutes depending on microwave power. Peel potato when cool.
  • In a nonstick mid-size saucepot over medium heat cook celery, bell pepper and onion in oil. Before veggies start to brown, add enough water to cover veggies. Cook veggies until tender.
  • Add cream of chicken soup and milk, chicken, potato, garlic and cheddar cheese. Stir until combined. Simmer for 10-15 minutes or until heated through.
