1 large egg
1/2 cup butter or margarine
1 cup sugar
1 1/2 cups flour
3 tbsp. (heaping) powdered cocoa
1 tsp. baking powder
1/2 tsp. salt
1 cup milk with 1 tsp. lemon juice and 1 tsp. baking soda
1 tsp. vanilla
Icing
1 cup (plus 2 tbsp.) powdered sugar
1 tbsp. butter or margarine
2 tbsp. (heaping) powdered cocoa
2 tbsp. hot water
1/2 tsp. vanilla
Directions
- Preheat oven to 325ºF . With an electric mixer, mix egg, butter and sugar in a bowl. Add milk, lemon juice and baking soda mixture to egg mixture.
- Combine flour, cocoa, baking powder and salt in a bowl. Gradually add flour mixture to wet mixture. Add vanilla.
- Pour into greased/floured 9 by 13 inch sheet cake pan. Bake 20-25 minutes or until long thin stick inserted in bread comes out clean- not sticky with dough. Meanwhile, make icing. When cake is done, frost immediately.
