Ingredients

  • 1 egg

  • 1/2 cup butter or margarine

  • 1 cup sugar

  • 1 1/2 cups flour

  • 3 tbsp. (heaping) powdered cocoa

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 1 cup milk with 1 tsp. lemon juice and 1 tsp. baking soda

  • 1 tsp. vanilla

  • Icing

  • 1 cup (plus 2 tbsp.) powdered sugar

  • 1 tbsp. butter or margarine

  • 2 tbsp. (heaping) powdered cocoa

  • 2 tbsp. hot water

  • 1/2 tsp. vanilla

Directions

  • Preheat oven to 325ºF . With an electric mixer, mix egg, butter and sugar in a bowl. Add milk, lemon juice and baking soda mixture to egg mixture.
  • Combine flour, cocoa, baking powder and salt in a bowl. Gradually add flour mixture to wet mixture. Add vanilla.
  • Pour into greased/floured 9 by 13 inch sheet cake pan. Bake 20-25 minutes or until long thin stick inserted in bread comes out clean- not sticky with dough. Meanwhile, make icing. When cake is done, frost immediately.
