  • 1 1/2 cups flour

  • 3/4 cup corn meal (heaping)

  • 2 tbsp. masa harina (golden corn flour)

  • 1/4 cup sugar

  • 4 tsp. baking powder

  • 1/2 tsp. salt

  • 1 egg

  • 1 1/4 cups cup milk

  • 1/4 cup melted butter (room temperature) cooking oil spray


  • Combine dry ingredients. Add egg, milk and butter. Beat at low speed for one minute.
  • Bake in an greased 8 by 8 inch pan in 425ºF oven for 20-25 minutes or until done.
