1 1/2 cups flour
3/4 cup corn meal (heaping)
2 tbsp. masa harina (golden corn flour)
1/4 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1 egg
1 1/4 cups cup milk
1/4 cup melted butter (room temperature) cooking oil spray
Directions
- Combine dry ingredients. Add egg, milk and butter. Beat at low speed for one minute.
- Bake in an greased 8 by 8 inch pan in 425ºF oven for 20-25 minutes or until done.
