Ingredients

  • 1/2 cup light olive oil

  • 1/2 cup powdered cocoa

  • 2 large eggs

  • 1 cup cane sugar

  • 1 tsp. vanilla extract

  • 3/4 cup unbleached flour

  • 1/4 tsp. salt

  • 1/2 cup chopped walnuts

  • oil (for pan)

  • flour (for pan)

  • powdered sugar

Directions

  • With an electric hand mixer or whisk, combine oil, cocoa, eggs, sugar and vanilla extract in a large mixing bowl.
  • Slowly fold in flour and salt. Fold walnuts into batter- mixture will be slightly thick. Spread with a spatula into a greased/floured 8 by 8 inch square pan.
  • Bake in a 350ºF for about 20-25 minutes or until done- toothpick inserted comes out clean. Cool before cutting into squares. Sprinkle with powdered sugar using a sifter. Makes about 16 brownies.
