1/2 cup light olive oil
1/2 cup powdered cocoa
2 large eggs
1 cup cane sugar
1 tsp. vanilla extract
3/4 cup unbleached flour
1/4 tsp. salt
1/2 cup chopped walnuts
oil (for pan)

Directions
- With an electric hand mixer or whisk, combine oil, cocoa, eggs, sugar and vanilla extract in a large mixing bowl.
- Slowly fold in flour and salt. Fold walnuts into batter- mixture will be slightly thick. Spread with a spatula into a greased/floured 8 by 8 inch square pan.
- Bake in a 350ºF for about 20-25 minutes or until done- toothpick inserted comes out clean. Cool before cutting into squares. Sprinkle with powdered sugar using a sifter. Makes about 16 brownies.
