This Southwest Bean Salad is a salad made with a combination of beans, vegetables, and a tangy southwestern-style dressing. 

Ingredients

  • 15 oz. can garbanzo beans drained

  • 15 oz. can pinto beans drained

  • 6 oz. can sliced black olives

  • 1/2 cup finely chopped red bell pepper

  • 1/4 cup fresh chopped cilantro (to taste)

  • 1 chopped green onion

  • 1 fresh finely chopped serrano or jalapeno pepper (or to taste)

  • 1 minced garlic clove

  • 2 tbsp. olive oil

  • 1 lime (juice from)

  • 1 tsp. cane sugar

  • 1 tsp. chili powder

  • 1/2 tsp. dried oregano

  • 1/2 tsp. garlic salt

  • 1/4 tsp. cumin

  • 1/4 tsp. garlic powder

  • 1/4 tsp. onion powder

Directions

  • Combine first six ingredients together in a large bowl.
  • Whisk together oil, lime juice and dry ingredients in a mid-size bowl.
  • Pour dressing over bean mixture. Best chilled before serving.
