Garlic Salsa Eggs is a low-carb and easy breakfast or brunch dish.

Ingredients

  • 1 tsp. cooking oil

  • 1 tsp. butter

  • 2 eggs

  • 1 clove (for each egg) fresh pressed garlic

  • sprinkle dried parsley flakes

  • dash salt and pepper

  • cheese finely shredded

  • salsa

Directions

  • Heat butter and oil over medium-high heat in a non-stick medium-size skillet.
  • Crack and open eggs into the hot skillet. Immediately sprinkle eggs with salt and pepper, parsley and garlic.
  • Fry a few more minutes or until eggs are cooked and able to be turned- or to your preference- sunny side up.
  • Add more oil if sticking occurs. Lastly, top eggs with cheese and cover skillet with lid until cheese melts.
  • Top eggs with salsa.
