Ingredients
1 tsp. cooking oil
1 tsp. butter
2 eggs
1 clove (for each egg) fresh pressed garlic
sprinkle dried parsley flakes
dash salt and pepper
cheese finely shredded

Directions
- Heat butter and oil over medium-high heat in a non-stick medium-size skillet.
- Crack and open eggs into the hot skillet. Immediately sprinkle eggs with salt and pepper, parsley and garlic.
- Fry a few more minutes or until eggs are cooked and able to be turned- or to your preference- sunny side up.
- Add more oil if sticking occurs. Lastly, top eggs with cheese and cover skillet with lid until cheese melts.
- Top eggs with salsa.
