Vinaigrette Beet and Egg Salad- a delicious salad

Ingredients

  • 1 medium head romaine lettuce (washed and drained)

  • 1/4 head iceberg lettuce (washed and drained)

  • 16 oz. can sliced beets chilled, drained

  • 2-3 hard-cooked eggs coarsely chopped

  • 1/3 cup chopped walnuts or pecans

  • Vinaigrette Dressing
  • 1/4 cup vinegar

  • 1/3 cup extra virgin olive oil

  • 1 tbsp. prepared horseradish drained

  • 1/2 tsp. celery salt

  • dash freshly ground pepper

Directions

  • Tear lettuce into bite-size pieces. Toss ingredients together in a large bowl.
  • Whisk dressing ingredients in an another small bowl.
  • Pour dressing over beet salad and toss again. Yield: 7-8 servings.
