Mexican rice, also called as “Arroz Rojo” or “Arroz Mexicano” in Spanish, is a popular dish from Mexican cuisine. It is a flavorful dish made with rice, tomato sauce or fresh tomatoes, onions, garlic, and spices such as cumin and chili powder. 1 cup rice
1 1/2 tbsp. oil
1/4 cup onion chopped
2 cloves garlic minced
8 oz. can tomato sauce
water
1 tsp. chicken bouillon paste or granules
salt and pepper
Directions
- In a mid size saucepan, sauté rice in oil. Fry until lightly brown stirring often. Add onion and garlic.
- Cook 1 minute. Remove from heat and let sit for 1 minute.
- Combine water and tomato sauce to make 2 cups. Add this to chicken bouillon and salt and pepper. Stir until bouillon is dissolved.
- Bring to a boil, then turn down heat and cover saucepan with a lid and cook 20 minutes or until rice is tender.
