2 eggs
1/2 cup light olive oil
1 cup cane sugar
1 cup flour
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups finely grated carrots
1/2 cup walnuts chopped
Directions
- Combine flour, cinnamon, baking powder and salt in a mid-size bowl. With an electric mixer, blend eggs, oil and sugar in an another mid-size bowl.
- Gradually add dry mixture to wet mixture, blend until batter is smooth. Blend in carrots until smooth. Fold in nuts with a spatula.
- Pour batter into a 8×8 inch greased and then floured pan. Preheat oven to 350ºF. Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool and frost. Sprinkle frosting with finely chopped walnuts (optional).
- Cream Cheese Frosting
Ingredients
1/4 cup stick butter or margarine
4 oz. cream cheese
2 cups powdered sugar
Directions
In a mid-size bowl, blend ingredients with an electric mixer ingredients until smooth- adding powdered sugar gradually. Makes enough frosting to frost one 8×8 inch cake.
Notes
- A greased and then floured pan is a pan that has been brushed lightly with cooking oil. Then about a tbsp. of flour is put in the pan and the flour is moved around the pan coating the bottom and sides of the pan to facilitate easier removal of cake slices when baked.
