Ingredients
1 cup plum jam
3 tbsp. soy sauce
1/2 tsp. garlic powder
1/4 tsp. ground ginger or 1 tsp. minced fresh ginger
1 clove garlic minced
4 fresh boneless, skinless, chicken breast cubed (24 count)
20 oz. can pineapple chunks drained (or equivalent amount fresh pineapple)
2 green peppers cut in about 24 squares
8-10 12 inch metal safety skewers
Directions
- Combine plum jam, soy sauce, garlic powder, ginger and garlic.
- Marinate chicken in mixture for 4-6 hours. Place chicken, pineapple and green pepper on metal skewers. Brush with marinade.
- Broil or grill kabobs until fully cooked and chicken is no longer pink and chicken internal temperature is 165°F.
