Mediterranean Eggplant Dip is a healthy and delicious dip made by roasting fresh eggplant until fully cooked then adding various ingredients such as olive oil, garlic, lemon juice and seasonings to make a smooth textured dip.

Ingredients
1 medium size eggplant halved
4 tbsp. extra virgin olive oil divided
coarse salt and pepper to taste
2 cloves fresh garlic minced
juice of one medium lemon (or to taste)
Assorted olive halves for garnish
Directions
- Preheat oven to 400 degrees. Score the eggplant halves 1/8 inch deep. Place eggplant halves on sheet pan. Drizzle 1/2 tbsp. olive oil on top of halves. Sprinkle with salt.
- Bake for 15-20 minutes or until tender. Remove from oven and cool. Remove eggplant interior (discard eggplant skin).
- In a bowl, mash until consistency of chunky applesauce. Stir in lemon juice , garlic, remaining olive oil and salt and pepper to taste. Garnish with olives. Serve with crackers or crispy toasted bread.
Notes
- Alternatively, roast garlic with eggplant and combine
together when cooking is complete.
