Ingredients
2 eggs beaten
3 tbsp. light olive or grapeseed oil
1 cup diced green or red bell pepper
1/2 cup thinly sliced celery
1/4 cup sliced green onions
2 cloves minced garlic
1 cup diced cooked ham or chicken
3 cups cooked rice
1 tbsp. soy sauce
1/2 tsp. ground ginger
Directions
- In a large frying skillet or wok, scramble eggs and stir eggs until broken up. Set aside in a dish for a few minutes until added to fried rice mixture later.
- Heat oil, add bell pepper, green onions, celery, garlic, ginger and ham or chicken. Stir well, sauté for a few minutes or until tender.
- Add rice, stirring it very quickly so it will not stick to the pan. Add the soy sauce and ginger then mix well. Then add scrambled eggs. Mix well.
- Serve immediately on a serving dish. Pour over additional soy sauce.
