
Marinated Artichoke Hearts are made with frozen artichoke hearts or caned artichoke hearts which are marinated in a dressing consisting of olive oil, lemon juice and salad dressing mix. Marinated Artichoke Hearts can be served as an appetizer, for lunch or as a side dish for dinner.

Marinated Artichoke Hearts are a healthy and light appetizer or side dish
Ingredients
9 oz. package frozen artichoke hearts or 16 oz. can artichoke hearts
3 tbsp. extra virgin olive oil
2 1/2 tbsp. lemon juice
1 envelope Italian or vinaigrette salad dressing mix
Directions
- Cook frozen artichoke hearts according to package directions or drain and halve canned artichokes.
- Combine oil, lemon juice and Italian salad dressing mix in screw top jar. Shake to mix. Pour over artichokes in a bowl and stir until combined.
- Refrigerate covered for at least 4 hours, basting with marinade a few times. Drain well before using.
