Lemon chicken is a popular dish made with boneless crispy fried chicken pieces and is served at many American Chinese restaurants. The chicken is tossed in a tangy sweet and sour sauce made with lemon juice, sugar, and other spices. It is usually served over rice and garnished with green onions, crushed red pepper flakes or sesame seeds. Sautéed sliced carrots, green bell pepper, onion and pineapple chunks may also be added to the dish.

Crispy Lemon Chicken is a Delight to Eat

Ingredients

  • cooking oil

  • 1 1/2 lb. package cooked breaded chicken tenders (nuggets will also work)

  • 4 cups cooked rice

  • lemon sauce (below)

  • sliced green onion

  • crushed red pepper flakes

  • sesame seeds

Directions

  • Cook chicken tenders according to package directions.
  • Place cooked, warm rice on each plate. Top with cooked chicken.
  • Pour warm lemon sauce over chicken and rice. Sprinkle with sliced green onion, red pepper flakes and sesame seeds.
  • Lemon Sauce
    Ingredients
    1 cup water
    1/2 cup cane sugar
    2 tbsp. cornstarch
    2 tbsp. butter or buttery spread
    1/3 cup lemon juice
    1 tsp. lemon zest chopped
    Directions
    Combine water, sugar and cornstarch. Bring mixture to a boil. Lower heat and stir for five minutes until sauce is thickened. Remove mixture from heat. Add butter, lemon juice and lemon zest. Makes almost 2 cups.
