Ingredients

  • 1 large egg

  • 1/2 cup butter or margarine

  • 1 cup sugar

  • 1 cup milk with 1 tsp. lemon juice and 1 tsp. baking soda

  • 1 1/2 cups flour

  • 1/4 cup cocoa powder

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 1 tsp. vanilla

  • Icing

  • 1 1/8 cups powdered sugar

  • 1 tbsp. butter or margarine

  • 3 tbsp. powdered cocoa

  • 2 tbsp. + 1 tsp. hot water

  • 1/2 tsp. vanilla

Directions

  • Preheat oven to 325ºF . With an electric mixer, mix egg, butter and sugar in a bowl until fluffy. Add milk, lemon juice and baking soda mixture to wet mixture.
  • Combine flour, cocoa, baking powder and salt in a bowl. Gradually add dry mixture to wet mixture. Add vanilla.
  • Pour into greased then floured 9 by 13 inch sheet cake pan and spread mixture to even out batter. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Meanwhile, with an electric mixer, mix together icing . When cake is done, frost immediately.

Notes

  • A greased and then floured pan is a pan that has been brushed lightly with cooking oil. Then about a tbsp. of flour is put in the pan and the flour is moved around the pan coating the bottom and sides of the pan to facilitate easier removal of cake slices when baked.
