Mexican rice, also called as “Arroz Rojo” or “Arroz Mexicano” in Spanish, is a popular dish from Mexican cuisine. The rice is a flavorful dish made with rice, tomato sauce, onions, and garlic.

Mexican rice can accompany many dishes, such as tacos, enchiladas, burritos, or grilled meats. It is a traditional food for many cultures.

Ingredients

  • 1 cup long grain white rice

  • 1 1/2 tbsp. oil

  • 1/4 cup onion chopped

  • 2 cloves garlic minced

  • 8 oz. can tomato sauce

  • water

  • 1 tsp. chicken bouillon paste or granules

  • salt and pepper

Directions

  • In a mid size saucepan, sauté rice in oil. Fry until lightly brown stirring often. Add onion and garlic.
  • Cook 1 minute. Remove from heat and let sit for 1 minute.
  • Combine water and tomato sauce to make 2 cups. Add this to chicken bouillon and salt and pepper. Stir until bouillon is dissolved.
  • Bring to a boil, then turn down heat and cover saucepan with a lid and cook 20 minutes or until rice is tender.
